Curcumin, also known as curcumin and acid yellow, is a natural phenolic antioxidant extracted from the rhizomes of ginger plants such as turmeric, curcuma, mustard, curry, and turmeric. The main chain is unsaturated aliphatic and aromatic groups. It is a rare pigment with diketones in the plant kingdom. It belongs to diketone compounds. It is a commonly used seasoning and food coloring. Antiviral, antibacterial, antioxidative (stronger than α-tocopherol), anticoagulant, hypolipidemic and anti-atherosclerosis and other pharmacological effects. In 1985, Indian scholar Kuttan first proposed the anticancer effect of curcumin. In recent years, the mechanism of curcumin’s inhibitory effect on the production, proliferation and metastasis of various tumor cells has been discovered. The National Cancer Institute of the United States lists it as a third-generation cancer treatment drug.
