What's Papain & Bromelain

Papain is to use biological engineering plants from papaya immature fruit extract of biological products and natural, it is composed of 212 amino acids, molecular weight for 21000, belong to contain sulphur (SH) peptide chain enzymes, has the protease and ester of the enzyme activity, and have a wide range of specificity, protein, polypeptide of plants and animals, esters,amides,etc have strong ability of enzyme solution, but also has the ability of synthesis, the protein hydrolysis content to synthesize protein kind material,this ability can be used to improve plant and animal protein nutritional value of nature.

Bromelain is a sulfhydryl protease extracted from pineapple juice and peel. Light yellow amorphous powder, slightly peculiar odor.The molecular weight is 33000. The optimum pH values for casein, hemoglobin and baee were 6-8 and 5.0 for gelatin. The enzyme activity was inhibited by heavy metals. It is slightly soluble in water, but insoluble in ethanol, acetone, chloroform and ether.It preferentially hydrolyzes the peptide chain on the carboxyl side of basic amino acids (such as arginine) or aromatic amino acids (such as phenylalanine and tyrosine), selectively hydrolyzes fibrin, and can decompose muscle fiber, but has little effect on fibrinogen. It can be used for beer clarification, medicinal digestion, anti-inflammatory and detumescence.
